Old Timey Southern Recipes
Here is a collection of regional recipes from some
of the best cooks in this mountains areas. Many  of
these recipes are old family favorites that have
been handed down through many generations.   
Most of these recipes was cooked on a wood cook
stove

Leather Breeches Beans
With a long needle and a strong thread, string fresh green beans
from your garden. Hang up to dry, in a warm place.
When dry place in a large jar, add a cup of salt (granny always
said this would keep bugs out of them).
When on a cold winter day, put the beans in a big pot with a fair
sized piece of side meat. Cook for 4 to 5 hours.
How to make Home Brew
Chase some wild bullfrogs fer three miles, to gather up hops. To
them add ten gallons of tan bark, with a 1/2 pint of shellac, and
one bar of home made lye soap. Bring to a boil, and continue to
boil fer 36 hours. Then strain through a I W W  sock, to keep it
from working. Add one grasshopper to each pint to give it a kick.
Pour a little into the kicthen sink, if it takes the enamel off, it's
ready to bottle.
